- 1 cup farro
- 4 cups kale chopped
- 1/2 cup dried cranberries
- 1/2 cup feta cheese crumbled
- 1/4 cup walnuts chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Start by cooking the farro according to package instructions.
While the farro is cooking, prepare the kale.
In a large mixing bowl, combine the cooked farro and kale.
