Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions
 

  • Rinse the quinoa under cold water and drain.
  • Combine the quinoa and water in a pot and bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes.
  • Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  • In a large bowl, combine the cooked quinoa with cherry tomatoes, cucumber, red onion, olives, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Gently fold in feta cheese just before serving.

Notes

For best flavor, enjoy this salad fresh but it keeps well in the refrigerator for up to 5 days. Serve chilled for the best experience.
