Ingredients
  

  • 2 ripe avocados
  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup corn fresh or frozen
  • 1/2 red onion finely diced
  • 1/4 cup cilantro chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions
 

  • Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  • In the same bowl, add the rinsed black beans, cherry tomatoes, corn, red onion, and cilantro.
  • Drizzle the juice of the limes over the mixture, then season with salt and pepper.
