Ingredients
  

  • 1 cup freekeh
  • 2 bell peppers diced
  • 1 zucchini diced
  • 1 red onion thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juiced
  • 150 g feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
