This Mediterranean Bean Salad features a vibrant mix of textures and bright flavors, making it an ideal dish for summer gatherings or a light, nutritious meal.

Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced (red or yellow)
  • 1/4 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions
 

  • Gather and prepare all ingredients.
  • In a large mixing bowl, combine the beans.
  • Add the cherry tomatoes, cucumber, bell pepper, and red onion.
  • Fold in the fresh parsley.
  • In a separate bowl or jar, whisk together olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss gently.
  • Taste and adjust seasoning as needed.
  • Let the salad rest for at least 30 minutes before serving.
