Ingredients
  

  • 1 cup chopped kale
  • 1 cup shredded red cabbage
  • 1 cup diced bell peppers red, yellow, green
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions
 

  • Wash and prepare all vegetables. Chop and dice kale, cabbage, bell peppers, tomatoes, cucumber, and onion.
  • In a large mixing bowl, combine the kale and a pinch of salt. Massage the kale gently for 1-2 minutes until it softens.
  • Add the shredded cabbage, diced bell peppers, cherry tomatoes, cucumber, red onion, and parsley to the bowl with the kale.
  • In a small bowl, whisk together tahini, lemon juice, maple syrup, salt, and pepper until smooth and creamy.
  • Pour the tahini dressing over the salad and toss gently until every piece of vegetable is well coated.
  • Serve immediately, or let it chill in the fridge for 15 minutes to meld the flavors even more.

Notes

For best results, use fresh vegetables and make the dressing just before serving. This salad can be stored in the fridge for up to two days, but for the best texture, enjoy fresh!
