Fresh and Flavorful Lemon Tarragon Pasta Salad

Bright and zesty, this Lemon Tarragon Pasta Salad combines al dente pasta with fresh herbs and vibrant flavors, making it a refreshing dish for any gathering.

Ingredients
  

  • 12 oz fusilli pasta
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh tarragon chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1/2 cup diced cucumber
  • 1/3 cup feta cheese crumbled (optional)

Instructions
 

  • Cook the pasta according to package instructions until al dente.
  • Drain and rinse the cooked pasta under cold water.
  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper to create the dressing.
  • Add the cooked pasta to the bowl, tossing it in the dressing until fully coated.
  • Fold in the tarragon, cherry tomatoes, cucumber, and feta (if using).
  • Taste and adjust seasoning, if needed.
  • Let the pasta salad sit in the refrigerator for at least 30 minutes before serving.
  • Serve chilled or at room temperature, garnished with additional tarragon if desired.
