Ingredients
  

  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup snow peas trimmed
  • 1 cucumber diced
  • 1 carrot shredded
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled (optional)
  • For the dressing: 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the vegetables by washing and chopping them accordingly.
  • In a large bowl, mix all the prepared veggies together, adding the parsley and feta cheese.
  • Whisk the dressing ingredients in a separate bowl until smooth and well-combined.
  • Drizzle the dressing over the salad just before serving, tossing to combine.

Notes

Best when served fresh, but can be stored in the refrigerator for up to two days. For meal prep, keep the dressing separate until serving.
