  • 1/2 cup feta cheese crumbled
  • 1 avocado diced
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Prepare the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper in a bowl.
  • In a large bowl, mix together chickpeas, cucumber, red bell pepper, cherry tomatoes, and red onion.
  • Gently fold in the feta cheese, avocado, sun-dried tomatoes, and Kalamata olives.
  • Divide the salad mix into four layers in mason jars, adding dressing to the bottom to keep ingredients fresh and crisp.
