Ingredients
  

  • 2 cups shelled edamame
  • 1 cup shredded carrots
  • 1 red bell pepper diced
  • 1 cucumber diced
  • 1/4 cup green onions sliced
  • 1/4 cup sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon grated fresh ginger
  • Salt and pepper to taste

Instructions
 

  • Boil edamame until tender, around 3-5 minutes.
  • Prepare the veggies: dice cucumber, shred carrots, and chop bell pepper and green onions.
  • Make the ginger dressing by whisking together soy sauce, rice vinegar, sesame oil, and grated ginger.
  • In a large mixing bowl, combine the cooled edamame, shredded carrots, diced cucumber, diced bell pepper, and sliced green onions.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Sprinkle sesame seeds on top and serve immediately or refrigerate for 30 minutes to enhance the flavors.

Notes

For best results, serve chilled. Toss the sesame seeds just before serving to keep them crunchy!
