Ingredients
  

  • 2 cups corn kernels fresh or frozen
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped

Instructions
 

  • Prepare the corn kernels by spreading them out on a baking sheet.
  • Drizzle olive oil over the corn and sprinkle with smoked paprika, salt, and pepper.
  • Air fry the corn at 400°F (200°C) for 10-15 minutes, shaking the basket halfway through.
  • While the corn is air frying, prepare the avocado dressing by blending avocados, lime juice, garlic powder, salt, and pepper in a food processor until smooth.
  • In a large bowl, combine the air-fried corn, cherry tomatoes, red onion, and cilantro.
  • Drizzle the avocado dressing over the salad and toss to combine.
  • Serve immediately or chill for 10 minutes to meld the flavors before serving.

Notes

Best served fresh, but can be chilled briefly to meld flavors. Avocado dressing can be made a few hours ahead; just store it in an airtight container to prevent browning.
